
300 g cup mushrooms, thinly sliced
1 tbsp horseradish
cream
lemon, juiced
2 tbsp chopped dill
3 shallots, chopped
Salt and pepper to taste
Additional shallots and dill to serve

Slice mushrooms and place mushrooms in a large bowl.

Combine horseradish, cream, lemon juice, chopped dill and shallots in a bowl. Stir to combine then season to taste with salt and pepper. Pour horseradish dressing over mushrooms and gently mix to coat.

Transfer the salad to a serving plate and top with additional shallots and dill. Serve cold or refrigerate until ready to serve immediately.
NOTE: As this recipe uses raw mushrooms, its best to serve immediately, as once assembled, the mushrooms will start to absorb the dressing. Prep in advance and toss the mushrooms through the dressing just before serving.
