Mingle Mexican Fajita Recipe Base
¼cup olive oil
8flour tortillas
¼cupwater
1avocado, sliced
½punnet cherry tomatoes, halved
¼cupcoriander leaves, to serve
1lime, cut into wedges, to serve
Method

Place the Mingle Mexican Fajita Recipe Base, olive oil and water in a small bowl. Stir to form a paste.

Place the mushrooms on a tray. Drizzle the Mingle paste over the mushrooms and toss to coat.

Heat a BBQ over medium heat. Cook the mushrooms, gill side down for 4-5 minutes then flip and cook for a further 3-4 minutes or until tender. Remove from the heat and set aside.

Place individual tortillas on the BBQ plate for 10-15 seconds to warm through. Transfer to a plate and cover with foil to keep warm.

To assemble the fajitas, arrange 2 mushrooms on each tortilla. Top with avocado, onion and cherry tomato slices. Serve with coriander leaves and a squeeze of lime juice.
