150gmixed mushrooms, sliced
2tbspolive oil
3sprigs thyme, leaves removed
1cupsmooth ricotta
½cupmozzarella
¼cupparmesan cheese
2tbspolive oil, additional
2x 16 inch pizza bases
1cuprocket, to serve
Chilli oil additional olive oil, to serve

Preheat the oven to 180℃.

Heat an ovenproof frying pan over high heat. Add the olive oil, sliced mushrooms and thyme. Cook, stirring for 3-4 minutes or until the mushrooms have softened. Remove from the pan and set aside.

Place the ricotta, mozzarella and parmesan cheese in a bowl. Stir to combine then season to taste with pepper.

Return the frying pan to the heat. Add 1 tablespoon of the additional olive oil to the pan. Once hot, add a pizza base. Top with half of the cheese mixture and mushrooms. Cook until the base is golden then transfer the pan to the oven to bake the pizza for 10 minutes. Remove the pan from the oven.

Transfer the pizza onto a plate. Top with rocket and a drizzle of chilli oil. Cut into wedges and serve.

Repeat steps 4 & 5 to make the additional pizza.
