Balsamic Mushroom Sauce with Goats Cheese

Ingredients:
 300 g cup or swiss mushrooms, sliced
 2 tbsp olive oil
 4 garlic cloves, sliced
 23 sprigs thyme
 2 tbsp balsamic vinegar reduction
 Salt & Pepper, to taste
 150 g goats cheese, to serve

Heat oil in a large frying pan over medium heat. Add the garlic and cook for 2-3 minutes or until fragrant.

Add the sliced mushrooms and thyme leaves to the pan and cook, stirring for 7-8 minutes or until the mushrooms are tender.

Add the balsamic vinegar reduction and 1-2 tablespoons of water to the pan. Stir to combine then reduce heat to low and simmer for 3-4 minutes or until the liquid has evaporated. Season to taste with salt and pepper.

Arrange the balsamic mushrooms in a serving bowl and top with goats cheese and a sprinkle of additional thyme leaves.

Serve as a side dish to grilled or roasted meats or vegetables, or as a topping on toasted bread.
