Ingredients:
Chimichurri
⅓cupolive oil
2tbspred wine vinegar
1clove garlic, crushed
½tspdried oregano
½tspchilli flakes
½tspsmoked paprika
½cupchopped flat leaf parsley
Mushroom & Haloumi Skewers
500g500g white cup mushrooms
180gblock haloumi, cut into 3cm cubes
2long red chillis, 3cm sliced
2long green chillis, 3cm sliced
16bamboo skewers
¼cupolive oil
1cuprocket (optional)
Method:

To make the chimichurri, place all ingredients for the chimichurri in a small bowl and stir to combine. Cover and set aside.

To prepare the mushroom skewers, use a double skewer and thread one mushroom onto the skewer, followed by a chilli slice and haloumi cube. Repeat this pattern again to fill the skewer to the top then apply the same pattern to assemble the remaining skewers.

Preheat the BBQ to a medium - high heat.

Use a pastry brush to coat the mushroom skewers in olive oil then place onto the preheated BBQ plate and cook for 3-4 minutes.

Once the mushroom skewers are on the BBQ plate, brush with chimichurri.

Turn the mushrooms then brush with additional chimichurri and cook for a further 2-3 minutes or until the mushrooms are tender.

Remove the mushroom skewers from the BBQ.

Serve the mushroom skewers on their own or on a bed of rocket leaves. Top with remaining chimichurri.
