Quick mushroom chow mein

 4 portobello mushrooms, sliced
 2 tbsp sesame oil or peanut oil
 2 cloves garlic, crushed
 23 cm piece ginger, grated
 300 g packet coleslaw mix
 500 packet fresh chow mein noodles
 2 tbsp soy sauce
 2 tbsp oyster sauce
 1 tbsp mirin
 1 tsp sugar
 2 shallots, chopped
 1 cup bean sprouts

Place 1 tablespoon of oil in a wok over high heat. Add garlic and ginger and cook, stirring for 1-2 minutes. Add the coleslaw mix to the wok and cook, stirring for 1-2 minutes. Gently separate the noodles with your hands then place them in the wok and cook, stirring for 3-4 minutes. If the noodles start to stick to the wok, you can add 1-2 tablespoons of water to the wok.

Place soy sauce, oyster sauce, mirin and sugar in a jug. Stir to combine then pour the sauce over the noodles, stirring until coated.

Add shallots and bean sprouts to the noodles. Stir to combine.

Transfer the noodles to serving bowls.

Place the remaining oil in the wok. Add mushrooms and cook, stirring for 3-4 minutes or until tender. Arrange mushrooms on top of the noodles and serve.
