Asian Style Prawn and Mushroom Salad

Asian style prawn and mushroom salad
Yields4 Servings
Mushroom Marinade
 ¼ cup Light soy sauce
 2 garlic cloves, crushed
 1 tsp Chinese five spice
 1 tbsp brown sugar
 2 tbsp sweet chilli sauce
 2 tbsp extra light olive oil
Salad
 400 g Whole Button Mushrooms
 24 medium cooked prawns, peeled
 100 g Asian green salad mix
 1 red capsicum, cut into thin strips
 1 cup Bean spouts
 2 Carrots, peeled, cut into thin strips
 ½ cup coriander, washed and chopped
 ½ cup mint leaves, washed and chopped
 to serve
This delicious Asian Style prawn and mushroom salad is perfect for lunch or as a light dinner on a warm summers night. The marinated mushrooms pair well with fresh prawns and coriander. Prep your prawns and mushrooms ahead of time, so they soak up all the yummy marinade, and assemble just before serving.

Combine the soy sauce, garlic, five spice, sugar, sweet chilli sauce and oil in a screw-top jar. Shake until well combined.

If you are using small button mushrooms, they can be left whole, however if you are using mushroom cups, cut into quarters.

Place the mushrooms in a large ceramic bowl. Pour over three-quarters of the dressing. Stir gently to coat. Cover and stand for 30 minutes to marinate.

Add the prawns, salad greens, capsicum, bean sprouts, carrot, coriander and mint to the marinated mushrooms. Toss gently to combine. Spoon over the remaining dressing. Serve with prawn crackers.
