Add a light layer of olive oil to the steaks and season both sides with CheatMeats All Purpose Rub.
Slice the Swiss Brown Mushrooms into quarters.
Set your Weber Q to high and allow to preheat with the pan inside. For 5 minutes.
Add the chopped mushroom to the pan and drizzle with olive oil.
Sweat the mushrooms off for 5 minutes then season with salt and pepper.
After a further 5 minutes add fresh thyme to the pan.
Place the steaks directly on the grill next to the pan and grill for 4-5 minutes.
Once the mushrooms have caramelized add cooking cream and mix.
Add slices of the blue cheese, mix and allow to thicken.
Flip the steaks and cook for a further 4 minutes while the mushrooms sauce thickens.
Remove the steaks from the grill and allow to rest for 5 minutes.
Remove the sauce from the grill and allow to slightly cool.
Slice the rested steaks and serve straight on to plates.
Generously spoon the mushroom sauce over the top of the steaks, garnish with the zest of a lemon and fresh Italian parsley over the top.
