
Preheat the BBQ to a medium heat.
Combine the ingredients for the dressing in a small bowl. Set aside until required.
Arrange the salad ingredients on a serving platter. Cover and refrigerate until ready to serve.
Drizzle the olive oil on the preheated BBQ flatplate. Place the nduja on the BBQ plate and cook, stirring for 2-3 minutes. Add the mushrooms and cook, stirring for 4-5 minutes or until tender. Remove from the BBQ and set aside.Â
Coat the bunch of chicory in the dressing then cook on the BBQ for 1-2 minutes or until tender and lightly charred. Remove and set aside.
To serve, arrange the nduja mushrooms and grilled chicory on the bed of prepared salad and drizzle with the remaining salad dressing.Â
