Place the chopped mushrooms in a bowl with the lemon juice, olive oil, cumin and seasoning. Stir to combine then cover and set aside while you prepare the remaining ingredients.
Place the chopped parsley, mint, tomato, cucumber and onion in a bowl. Add the marinated mushrooms. Stir to combine.
Season to taste with salt and pepper.
Serve as a side to grilled, roasted or barbequed meats or add to wraps and sandwiches.
